Since changing up my diet in a majorly healthy way, I have
become quite an amazing cook. I wouldn’t say amazing in terms of culinary
greatness. I’m more so referring to my resourcefulness when it comes to making
a meal out of few ingredients. Or at least making a meal out of some
ingredients you’d never expect. That’s the kinda cooks I am. I make due with
what’s in the fridge and pantry, and you’d never realize it wasn’t some sorta
fancy meal that took a lot of planning and prep and skill. It’s just typically
us throwing something together that sticks and makes sense in the moment.
And, of course, such a shift in diet and lifestyle means
that I am no longer consuming crappy foods that take a toll on my body.
Instead, I’ve made a point to not only eat plant-based but also far less
processed foods. This has worked amazingly in getting me more and more excited
about my dinners and cooking and less worried about shopping for ingredients or
putting elaborate lists together of what’s needed when I am at the store. In
fact, I’ve become a lot looser about the ingredients and portioning needed, and
I think that’s allowed me to really come into myself as a cook. By avoiding the
crappy candy boxes and fatty chips, I am actively thrusting myself into the
fire by chopping raw ingredients and learning how to portion out my food.
It’s been an amazing journey is all I can really say.
Without a doubt, I’ve grown more as a cook in these last 6 months than almost
any other point in my life. I wouldn’t change my drastic diet changes for the
world.
So if you want to say goodbye to all the processed food in
your life, all the chips and candy boxes, get up and cook a dinner for you and
yours for a week straight. You’ll be consumed by how fun it is, how challenging
it is, how tasty it is, and how amazing it can make your life. Your body will
change for the better, your mind will change for the better, and your
relationships will change for the better. And that’s all because you’re more
focused and care more about something like your diet and the things you choose
to consume.
